Spring Finally!

Wow! That was a long winter.  So glad to out today without a coat.
 
This was our yard on March 6th
 
And here is yesterday April 14th - what a difference!  This is our first flower of the year, a lonely daffodil.  Hopefully more will follow soon.   My tulips are coming up very full and I can't wait to see all the colors. 
 
 
Even though it was super windy out, we attempted to plant some seeds we got at the dollar store.  We were even able to get the potting soil there. Not sure about the quality, but if nothing grows, we at least didn't spend an arm and a leg on our attempts.  The boys love planting stuff though I am pretty sure they probably won't be eating more than the peas or green beans.  I have been on a huge kale kick lately, so I really do want to seriously plant some kale for myself. 
 
 
I will have to dig out some gardening scrapbook paper and stickers I have for these photos - it will make a cute layout.

These are pumpkin seeds from our pumpkins last fall.  We washed and dried the seeds and then stored they in a dark place all winter.  It will be interesting to see what happens with these. 
 
 I think the kids had just as just fun watering the newly planted bulbs in the front garden.

January 13th 2014!

Busy Season is officially Over...

I like to refer to the timeframe between October 31st and January 12th as my "busy season".   It all starts with the excitement of Halloween and also by this point school, sports and all that comes with that is in full force.  Next is Joey's Birthday and then Thanksgiving.  Of course next is all the hoopla that comes with Christmas.  Then to top it off David's Birthday.  Today I can breathe.  It is done for another year.

 
 







And today I am officially the mom to a 9 Year Old and a 4 Year Old.  Amazing. 

 
The days are long and being a mom to two children is by far the hardest job I have ever had (especially when you have been sleep deprived for years), but it is so rewarding. One of my biggest struggles is the 5 year age difference, I constantly feel like I am a referee between the two of them. The interests, wants and needs are at different stages, so I constantly feel like I am being pulled in two directions.  That being said,   I love the everyday moments, the special things we do together and the funny things these two tell me.  They are very entertaining to say the least.  They fill my heart with joy and love!

My New Blue NutriBullet

My Sweet DH bought me a NutriBullet for Christmas and I was so excited. After reading the recipe book that is included with it, I was intrigued by a lot of the combinations that you can put together and they actually do taste good!  I think the best bet would be to make a grocery list based on the ingredients in the recipe book.



So far I made a smoothie with Strawberries, Raspberries, Watermelon, Avocado, Spinach, Cucumber and Water.  I mixed the fruit first and it was the sweetest, prettiest deep pink color.  The Vegetables blended together were a deep green color.  I then mixed the two together (pink and green).  I did this only because my 4 year old was helping me (not using the blade of course) and he wanted to try the fruit only.  He loved it!   Both my children love to watch how quickly it liquefies everything. 

Tonight I made chicken salad and salad dressing with it.  The chicken salad took seconds!  I just put in leftover chicken breasts that I had sauted last night.  After it was completely chopped up, I used the container that fits on the NutriBullet and added lite mayo, seasonings and a little bacon bits.

For the dressing, I added 1 small individual container of low-fat cottage cheese, 1/2 avocado, seasonings, fresh garlic and about 1/4 cup of low-fat milk (liquid).  It came out so creamy. The consistency is almost like creamy yogurt and the taste was so yummy!  The mild avocado flavor mixed with the garlic was very tasty.  I had enough for two servings, so I used the cover that comes with the NutiBullet container and refrigerated it.  I am not sure how this will hold, but we will see.   I have made homemade "ranch" dressing before using similar ingredients but had also included sour cream and maybe some parmesan cheese.   I think also maybe adding a little olive oil would probably add some depth to the dressing.  
 
 
When that was done, I put my ingredients in my salad.  All I had was baby spinach and cucumbers.  I am sure I could have added some tomato or onions, but I didn't have any. To complete the salad I added a dash of bacon bits.    I did add a few sun dried tomatoes in olive oil after for a little more zest after I took the pictures (I forgot I had them in the fridge)
 
This salad is light and delicious.  The taste is very mild but refreshing, I really like the combination of spinach, avocado and cucumber.  I really enjoy cooking up "new" recipes in my kitchen, especially when I have the time, energy and of course fresh ingredients in the house.

Fun Loom Bracelets

We are "hooked".  lol  There are officially tiny elastic bands all over my house but all in good fun.  We have two different looms; one green one from Joann Fabrics and Crafts and one clear one from Ocean State Job Lot.  We have also tried looming with the prongs of a fork and also pencils.  I heard too that chopsticks work well.  We have every color band you can think of and I think Santa might have some for us too. 

This fishtail one below I made myself.  (The pattern reminds me of chevron)  Lil D showed me how to make it without a loom, just with my fingers.  It was a little tricky and hurt a few times when the elastic struck my skin, but I love how it came out.  I think it is a great craft for boys and girls and great use of manual dexterity and fine motor skills.
